Ingredients:
2 ½ oz. ¼ inch diced sushi grade Ahi tuna
1 heaping Tbsp. ¼ inch diced ripe mango
1 heaping Tbsp. ¼ inch diced ripe tomato (no seeds)
¼ avocado (medium firm but ripe) ¼ inch diced
¼ tsp. prepared wasabe
1 tsp. soy sauce
½ tsp. toasted sesame oil
balsamic reduction (for garnish)
1 sprig cilantro (for garnish)
Tools:
1 - 3 inch diameter, 2 inch tall ring form
Preparation:
Mix soy sauce, wasabe, sesame oil with cubed tuna. Place ringform (lightly greased with sesame oil) on plate and place tuna mixture in ring to form first layer. Next layer diced mango. Next layer diced tomato. Final layer diced Avocado. All ingredients should come to top of ring. Lightly press down all layers. Gently slide ring off and garnish with micro greens, balsamic reduction and prepared wasabe.
